Serrano
Ham (Jamón Serrano)
All our hams are sourced from Jamones de Aragón in the Teruel region
of Aragón, the only Serrano ham to have been awarded Denominación
de Origen (D.O.) status. Our hams also have the E.T.G. guarantee ensuring
that each one has a delicate pink meat with a smooth texture and a sweet
taste. All our (D.O.) hams have been cured for a minimum of 14 months,
including our Aragón Gran Reserva, and are available on the bone,
boneless or pre-sliced.
Ibérico
Ham (Jamón Ibérico)
Coming from the Ibérico breed of
pig, directly descended from wild boar, they roam freely and feed primarily
on acorns giving the meat an exquisite and unique taste and texture, unequalled
by any other ham in the World. These hams are also available with the
D.O. guarantee and are available on the bone, boneless or pre-sliced.
Cured
Beef (Cecina)
Little known outside of Spain, this is a real jewel. The carefully selected
beef of more than 5 years of age is lightly smoked over holm oak to provide
aroma. To comply with I.G.P they must be cured for a minimum of 7 months.
Our products are cured for a minimum of 12 months, denoted by the term
Reserva, with some up to 18 and 24 months. Available in full or half pieces,
portions (all fully trimmed if required) or pre-sliced. All our pieces
are individually numbered, from selection through to sale. We guarantee
that there is no better quality Cecina available in the UK.
For best results ensure that the beef is sliced wafer thin so that it
literally melts in the mouth.
