Our charcuteria
is selected and sourced from Ferju for the quality of the meat used, the
addition of only natural herbs and spices and the lack of artificial colours
or preservatives.
Chorizo
(Chorizo Extra)
Only the finest pork, ham, pork shoulder and sirloin (denoted by the term
“extra”), belly pork, paprika, garlic, oregano and salt are
used, and are only cured in natural casings. Lightly smoked over oak you
have the choice of Sweet (Dulce) or Spicy (Picante) which are available
in Sarta (hoops) or Cular (long) formats.
Salami
(Salchichón Extra)
Again cured in natural casings and consisting of only quality cuts of
pork, ham, pork shoulder and sirloin, belly pork, pepper, garlic, oregano
and moscada nut. They are available in either Sarta or Cular formats.
Cured
Pork Loin (Lomo extra artesan)
Only the finest loin is selected and cured with natural spices. After
lightly smoking over oak the loin is cured for over 5 months. Available
as whole, half, portions or pre-sliced. For
best results ensure that the loin is sliced wafer thin so that it literally
melts in
the mouth.
Smoked Bacon (Panceta) –
Natural or Paprika Marinated
Cured
with natural spices of pepper, garlic, oregano, moscada nut and/or paprika
it is then lightly smoked. A fantastic addition to any dish.
