Denominación de Origen (D.O.)
– Designation of Origin.
Indicación Geografica Protegida (I.G.P.)
– Indication of Geographical Protection.

A governing body exists for each type of food (with the exception of Olive Oil), with skilled, impartial members on each board that perform inspections into the quality, ingredients, and production processes of each product, making sure they satisfy the standards set. Products labelled with (D. O.) or (I.G.P.) are considered to be of superior quality, with characteristics specific to each geographic region of origin. Each product
grouping has it own label design.

Especialidad Tradicional Garantizada (E.T.G.)
– Guarantee of Traditional Speciality.

Created by the European Union the E.T.G. guarantees that the Serrano ham conforms to set standards of weight, size, has been made using certain processes and, most importantly, that it achieves a high level of quality.
